Chicken & Pear Cobb Salad with Creamy Herb Dressing

This creamy and bright tasting dressing can be used on leafy greens, pasta salads or served as a dip for vegetable crudité. The Chicken & Pear Cobb Salad is a nutritious twist on a classic, composed salad that makes a great lunch or dinner entrée.

Ingredients

3 cups750 mLGAY LEA - Regular Sour Cream, or Low Fat
1/2 cup125 mLCanola Oil
1/2 cup125 mLGAY LEA - 2% Partly Skimmed Milk
1/2 cup125 mLFresh Lemon Juice
1/4 cup50 mLLemon Zest, finely grated
1/4 cup50 mLFresh Chives, finely chopped
1/4 cup50 mLFresh Parsley, finely chopped
2 tbsp30 mLFresh Tarragon, finely chopped
2 tsp10 mLHoney
1 tsp5 mLSalt
1 tsp5 mLPepper
2 cups500 mLBaby Greens, Such As Arugula, Mescaline Mix Or Spinach
6 oz175 gChicken Breast, grilled and sliced
1/2 cup125 mLRed Pear, thinly sliced
1/4 cup50 mLCelery, thinly sliced
1/4 cup50 mLIvanhoe Swiss Cheese, cubed
2 tbsp30 mLWalnuts, toasted and chopped (optional)
2 tbsp30 mLRed Onion, thinly sliced
2 tbsp30 mLDried Sweetened Cranberries
1/4 cup50 mLCreamy Herb Dressing

Instructions

  1. Whisk the sour cream with the oil, milk, lemon juice, lemon zest, chives, parsley, tarragon, honey, salt and pepper until well combined. Cover and refrigerate for up to 5 days.

Single Serving:

  1. Arrange baby greens on a large plate. Place chicken, pear, celery, cheese, walnuts (if using), onion and cranberries in neat rows over the greens. Drizzle dressing over the entire plate or serve on the side.
