- 3 chocolate sandwich cookies, divided
- 2 tsp (10mL) GAY LEA - Salted Butter, melted
- 1 cup (250mL) Nordica Smooth - Salted Caramel
- 1 egg yolk
- 2 tbsp (30mL) HEWITT'S - milk
- 1 pkg GAY LEA - Regular Whipped Cream, optional
- Preheat oven to 350°F (180°C). Finely crush 2 cookies in a mini chop or food processor. Stir with melted butter and press into a heat-proof, 8 oz (250 mL) ramekin.
- Blend Smooth cottage cheese with egg yolk and milk. Roughly crumble remaining cookie and fold into cheese mixture. Pour over crust.
- Bake for 15 to 20 minutes or until just set. Cool to room temperature and chill before serving.
- Replace the Nordica Salted Caramel with the Vanilla Bean Flavour.
- Replace the chocolate sandwich cookies with peanut butter sandwich cookies.
