Peanutty Shortbread Bars
Simply scrumptious, perfect as a yummy snack for the entire family.
Preparation Time:

Ingredients:
| 3/4 cup | GAY LEA Butter (unsalted), softened | 175 mL |
| 1/2 cup | chunky peanut butter | 125 mL |
| 1/2 cup | icing sugar, sifted | 125 mL |
| 1/4 cup | packed light brown sugar | 50 mL |
| 1 tsp | vanilla | 5 mL |
| 2 cups | all-purpose flour | 500 mL |
| 3/4 cup | mini chocolate chips | 175 mL |
| 2 oz | semi-sweet chocolate, melted | 60 g |
Instructions:
Preheat oven to 375F (190C). Line bottom of 13 x 9-inch (3.5 L) baking pan with parchment paper.
Using electric mixer, beat butter and peanut butter together until well blended. Beat in icing and brown sugars, beating until light coloured. Beat in vanilla. Using wooden spoon, gradually stir in flour and then chocolate chips. With lightly floured hands, press dough evenly into prepared pan.
Bake in centre of oven for 15 to 20 minutes or until lightly golden around edges. Cool in pan on rack. Drizzle with melted chocolate.
Makes 48 bars.
