Halibut with Lemon Plum Sauce
The sweetness of plum and tartness of lemon are perfect with your favourite fish.
Preparation Time:

Ingredients:
| 4 | halibut fillet portions, about 6oz (175g) each | 4 |
| 2 tbsp | Gay Lea Butter (Salted), melted | 25ml |
| 1 tbsp | finely chopped fresh basil | 15ml |
| 1/4 tsp | each salt and pepper | 1ml |
| Lemon Plum Sauce: | ||
| 1/2 cup | Gay Lea Sour Cream (Low Fat or Fat Free) | 125ml |
| 1/2 tsp | grated lemon rind | 2ml |
| 2 tbsp | lemon juice | 25ml |
| 2 tbsp | chopped fresh chives | 25ml |
| 1 | large Ontario black plum, finely chopped | 1 |
| Pinch of salt |
Instructions:
Lemon Plum Sauce: In bowl, whisk together sour cream, lemon rind, juice and chives until smooth. Stir in plums and salt; set aside.
Place fish in shallow dish, drizzle with butter, sprinkle with basil, salt and pepper. Place on greased grill over medium high heat; close lid and grill for about 10 minutes, turning once or until fish flakes easily with fork. Makes 4 servings.
Serve with Lemon Plum Sauce.
