Southwestern Pepper Medley

Colourful and crunchy, this side dish is the ideal accompaniment to chicken or grilled steaks.

Ingredients:

3 tbspGay Lea butter45 mL
2onions halved horizontally and sliced2
1 tbspgranulated sugar15 mL
1sweet red pepper julienned1
1each green and yellow sweet pepper, julienned1
1/2 tspeach chili powder and salt ? tsp (1 mL) each2 mL
1/4 cupground cumin and pepper chopped fresh coriander or parsley50 mL

Instructions:

In skillet, melt butter over medium-low heat. Add onions and sugar; cook, stirring, for 20 to 30 minutes or until very soft and golden. Stir in chili powder, salt,  cumin and pepper. Add peppers; cook , stirring, for 4 minutes or until softened. Transfer to serving bowl. Toss in chopped fresh coriander.

Makes 4 servings.
