Savoury Side Dishes
Southwestern Pepper Medley
Colourful and crunchy, this side dish is the ideal accompaniment to chicken or grilled steaks.
Preparation Time:

Ingredients:
| 3 tbsp | Gay Lea butter | 45 mL |
| 2 | onions halved horizontally and sliced | 2 |
| 1 tbsp | granulated sugar | 15 mL |
| 1 | sweet red pepper julienned | 1 |
| 1 | each green and yellow sweet pepper, julienned | 1 |
| 1/2 tsp | each chili powder and salt ? tsp (1 mL) each | 2 mL |
| 1/4 cup | ground cumin and pepper chopped fresh coriander or parsley | 50 mL |
Instructions:
In skillet, melt butter over medium-low heat. Add onions and sugar; cook, stirring, for 20 to 30 minutes or until very soft and golden. Stir in chili powder, salt, cumin and pepper. Add peppers; cook , stirring, for 4 minutes or until softened. Transfer to serving bowl. Toss in chopped fresh coriander.
