Burrito Favourites
Fiesta Chicken Burritos
These are quick and easy and have a Mexican inspired flavour in them.

Ingredients:
| 1 lb | boneless, skinless chicken breasts | 500g |
| 2 tsp | Gay Lea Salted Butter | 10ml |
| Pinch | each salt and pepper | Pinch |
| 2 cups | shredded Cheddar cheese | 500ml |
| 2/3 cup | Gay Lea Regular Sour Cream (Substitution: Try Gay Lea French Onion Dip or Gay Lea Light Sour Cream) | 150ml |
| 1 cup | diced green pepper | 125ml |
| 1/3 cup | salsa | 75ml |
| 1/2cup | sliced black olives (Optional) | 50ml |
| 1 | jalapeno pepper, seeded and minced | 1 |
| 2 tbsp | chopped fresh coriander | 25ml |
| 4 | large flour tortillas | 4 |
Instructions:
Cut chicken into small ?-inch (2.5cm) cubes. In skillet melt Gay Lea Salted Butter over medium high heat and cook chicken, salt and pepper for about 8 minutes or until no longer pink inside. Pour into large bowl and stir in 1/2 cups (375ml) of the cheese, Gay Lea Sour Cream, green pepper, salsa, olives, jalapeno and coriander. Divide mixture among tortillas and fold and roll to enclose filling completely and place seam side down in small baking dish. Sprinkle with remaining cheese and bake in centre of preheated 350 F (180 C) oven for about 20 minutes or until cheese is melted and tortillas are crispy.
