Light Lunch
Creamy Cucumber Raita
Ingredients:
| 1 | english cucumber, shredded | |
| 1 tsp | salt | 5 mL |
| 1/3 cup | mint leaves, finely chopped | 80 mL |
| 1 cup | Gay Lea Low Fat Sour Cream | 250 mL |
| 1 | green onion, finely chopped | |
| 1 tsp | lemon zest | 5 mL |
| salt and pepper to taste |
Instructions:
In a large bowl, toss the cucumber with salt and let rest for 15 minutes. Drain away any liquid and rinse with cold water. Pat cucumber dry on a paper towl.
Return cucumber to the bowl and add remaining ingredients. Season with salt and pepper to taste. Serve immediately or refrigerate until needed.
