Peanut Butter Tart Squares

These squares are a delicious treat for the family or a great gift for the holidays.

Ingredients:

1/4 cupGay Lea Spreadables Butter60 mL
1/4 cupsmooth peanut butter60 mL
1/3 cuplightly packed brown sugar75 mL
3/4 cupall-purpose flour175 mL
1/4 cupFleischmann's Canada Corn Starch60 mL
1/4 tspsalt1 mL
Topping:
1/2 cupBeeHive Corn Syrup125 mL
2 tbspFleischmann's Canada Corn Starch30 mL
1/4 tspbaking powder1 mL
PinchSalt
2 tbspGay Lea Spreadables Butter30 mL
2Naturegg Omega 3 Eggs, beaten
1 tspVanilla5 mL
1/2 cupchopped unsalted roasted peanuts125 mL
1/2 cupCHIPITS REESE Peanut Butter Chips125 mL
1/2 cupCHIPITS SPECIAL DARK Chocolate Chips125 mL



Instructions:

Beat butter, peanut butter and sugar in bowl until creamy. Stir in flour, cornstarch and salt until well combined and crumbly. Press evenly into bottom of buttered 8-inch (20cm) square baking dish. Bake in 350F (180C) oven for 12 to 15 minutes or until pale golden around edges; set aside.
 
Topping: Stir together corn syrup, cornstarch, baking powder and salt until smooth. Stir in butter, eggs, and vanilla until well blended. Pour over crust. Sprinkle peanuts, and peanut butter and chocolate chips over top.
 
Bake for 20 to 25 minutes or until golden and just set in the centre. Let cool completely in pan on rack. Cut into 1 1/2-inch (4cm) squares. Makes 20 squares.
 
Tip: Recipe doubles easily to fill a 9-x13-inch (3L) baking pan.
