Bruschetta with a Twist

Zucchini Bruschetta with Canadian Swiss Cheese

This delicious bruschetta twist is the perfect appetizer to impress guests and leave them excited for the rest of the meal to come.

Ingredients:

2 tbspbutter30 mL
4cloves garlic, minced
4 cupsdiced zucchini1 L
1/3 cupchopped sun-dried tomatoes75 mL
1/4 cupchopped fresh basil or 1 tbsp (15mL) dried basil50 mL
1/4 tspcayenne pepper1 mL
salt and freshly ground pepper
48diagonal slices (3/4 inch/ 2 cm thick) baguette (white or whole grain)
2 cupsshredded Canadian Swiss500 mL



Instructions:

Preheat broiler.
 
In large non-stick skillet over medium-high heat, melt butter. Add garlic, zucchini, sun-dried tomatoes and onions; cook, stirring, for about 5 minutes or until vegetables have softened. Remove from heat; add basil, cayenne, salt and pepper.
 
Place baguette slices on a baking sheet and top with about 1 tbsp (15mL) of zucchini mixture. Sprinkle with cheese and broil until cheese has melted.
