Bruschetta with a Twist
Zucchini Bruschetta with Canadian Swiss Cheese
This delicious bruschetta twist is the perfect appetizer to impress guests and leave them excited for the rest of the meal to come.

Ingredients:
| 2 tbsp | butter | 30 mL |
| 4 | cloves garlic, minced | |
| 4 cups | diced zucchini | 1 L |
| 1/3 cup | chopped sun-dried tomatoes | 75 mL |
| 1/4 cup | chopped fresh basil or 1 tbsp (15mL) dried basil | 50 mL |
| 1/4 tsp | cayenne pepper | 1 mL |
| salt and freshly ground pepper | ||
| 48 | diagonal slices (3/4 inch/ 2 cm thick) baguette (white or whole grain) | |
| 2 cups | shredded Canadian Swiss | 500 mL |
Instructions:
Preheat broiler.
In large non-stick skillet over medium-high heat, melt butter. Add garlic, zucchini, sun-dried tomatoes and onions; cook, stirring, for about 5 minutes or until vegetables have softened. Remove from heat; add basil, cayenne, salt and pepper.
Place baguette slices on a baking sheet and top with about 1 tbsp (15mL) of zucchini mixture. Sprinkle with cheese and broil until cheese has melted.
