Scrumptious Soup
Herbed Pumpkin Soup
A delicious, satisfying soup that is very nutritious and a cinch to make. If using fresh pumpkin, cook as you would winter squash, then puree.
Preparation Time:

Ingredients:
| 1 tbsp | butter | 15 mL |
| 1 | medium onion, chopped | |
| 1/2 tsp | each: thyme and rosemary | 2 mL |
| Pinch cumin | ||
| 2 1/2 cups | each: pureed pumpkin, chicken broth, milk | 625 mL |
| 1 cup | Canadian Swiss cheese, grated | 250 mL |
Instructions:
In heavy saucepan, saute onion in butter until transparent. Add broth, pumpkin and spicing. Salt and pepper to taste.
Heat up on medium-low, then reduce to simmer 15 minutes, stirring occasionally.
Puree mixture. Add milk and reheat but do not boil.
Remove from heat. Stir in cheese until melted.
Makes 6 servings.
