Delicious Salmon Vegetable Chowder

This easy and satifying soup is full of healthy ingredients - including vitamin D. Plus, salmon is rich in heart-healthy, disease-fighting omega-3s.

Ingredients:

1 tbspbutter15 mL
1/2 cupchopped onion125 mL
1clove garlic, minced
1/4 tspeach thyme and basil
10 oz.can condensed chicken broth284 mL
1 cuppeeled, diced potatoes250 mL
1/2 cupeach, corn niblets, diced zucchini and carrots125 mL
2 cupsmilk500 mL
8 oz.uncooked salmon filet in small chunks225g
1/2 cupgrated Cheddar cheese125 mL



Instructions:

In heavy saucepan, saute onions in butter until transparent with garlic and herbs. Add broth and all vegetables.
 
Simmer, uncovered, until vegetables are cooked.
 
Add milk and salmon. Simmer, until salmon is opaque. Do not boil. Season to taste.
 
Divide into 4 bowls, sprinkle with cheese and enjoy!
