Scrumptious Soup
Delicious Salmon Vegetable Chowder
This easy and satifying soup is full of healthy ingredients - including vitamin D. Plus, salmon is rich in heart-healthy, disease-fighting omega-3s.

Ingredients:
| 1 tbsp | butter | 15 mL |
| 1/2 cup | chopped onion | 125 mL |
| 1 | clove garlic, minced | |
| 1/4 tsp | each thyme and basil | |
| 10 oz. | can condensed chicken broth | 284 mL |
| 1 cup | peeled, diced potatoes | 250 mL |
| 1/2 cup | each, corn niblets, diced zucchini and carrots | 125 mL |
| 2 cups | milk | 500 mL |
| 8 oz. | uncooked salmon filet in small chunks | 225g |
| 1/2 cup | grated Cheddar cheese | 125 mL |
Instructions:
In heavy saucepan, saute onions in butter until transparent with garlic and herbs. Add broth and all vegetables.
Simmer, uncovered, until vegetables are cooked.
Add milk and salmon. Simmer, until salmon is opaque. Do not boil. Season to taste.
Divide into 4 bowls, sprinkle with cheese and enjoy!
