Pasta with Pancetta Cream Sauce

This mild, smooth creamy sauce cloaking each strand of pasta makes this dish an all time family favourite.

Ingredients:

6 oz.linguine, fettuccine or spaghetti175 g
1 tbspbutter15 mL
1 tbspeach, finely chopped garlic and shallots15 mL
3 ozpancetta, diced90 g
2 tbspwhite wine30 mL
1 cup35% Whipping cream250 mL
2eggs, lightly beaten
salt and pepper
freshly grated Canadian Parmesan cheese



Instructions:

In a pot of boiling water, cook linguine for 10 minutes or according to package directions, until tender, drain well and return to pot.
 
Meanwhile, in large skillet, melt butter over medium heat; saute garlic and shallots, for 1 minute or until lightly browned. Add pancetta and saute for 20 minutes. Add wine, bring to boil, and cook stirring until most of the liquid has evaporated. Stir in cream; bring to boil. Reduce heat and simmer gently, stirring often, for about 3 minutes or until slightly thickened.
 
Stir in cream mixture and eggs into pasta; return to low heat for 2 minutes while tossing to coat. Season to taste with salt and pepper. Top with Canadian Parmesan cheese and serve.
 
Tip: Pancetta is Italian bacon that is cured but unsmoked. It is available by the piece or deli sliced at most supermarkets.
