Cottage Cheese Salad Topper
Zesty Italian Cottage Cheese Salad Topper
Try this Italian flavoured cottage cheese topper. It's great paired with salad and crusty Italian bread.

Ingredients:
| 2 cups | Gay Lea Nordica 2% Cottage Cheese | 500 mL |
| 1/2 cup | finely chopped roasted red peppers | 125 mL |
| 1/4 cup | finely chopped marinated artichoke hearts | 50 mL |
| 2 tbsp | Parmesan cheese | 30 mL |
| 1 tbsp | finely chopped capers | 15 mL |
| Salt and pepper |
Instructions:
Stir cottage cheese with roasted red peppers, articoke hearts, Parmesan cheese and capers until well combined. Season with salt and pepper to taste. Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
Makes 2-1/2 cups (625 mL).
Tip: Serve with Caesar salad and crusty Italian bread.
