Zesty Italian Cottage Cheese Salad Topper

Try this Italian flavoured cottage cheese topper. It's great paired with salad and crusty Italian bread.

Ingredients:

2 cupsGay Lea Nordica 2% Cottage Cheese500 mL
1/2 cupfinely chopped roasted red peppers125 mL
1/4 cupfinely chopped marinated artichoke hearts50 mL
2 tbspParmesan cheese30 mL
1 tbspfinely chopped capers15 mL
Salt and pepper



Instructions:

Stir cottage cheese with roasted red peppers, articoke hearts, Parmesan cheese and capers until well combined. Season with salt and pepper to taste. Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
 
Makes 2-1/2 cups (625 mL).
 
Tip: Serve with Caesar salad and crusty Italian bread.
