Cottage Cheese Topper
Blueberry Ginger Cottage Cheese Topper
Try this delicious recipe and pair it with fresh fruit!

Ingredients:
| 1 cup | blueberries | 250 mL |
| 2 cups | Gay Lea Nordica 2% Cottage Cheese | 500 mL |
| 1/4 cup | chopped walnuts | 50 mL |
| 2 tbsp | liquid honey | 30 mL |
| 2 tsp | flax seeds (optional) | 10 mL |
| 1-1/2 tsp | minced ginger | 7 mL |
| 1/2 tsp | vanilla extract | 2 mL |
Instructions:
Flatten blueberries in a small bowl with the back of a fork. Stir blueberries with cottage cheese, walnuts, honey, flax seed (if using), ginger and vanilla until well combined. Cover tightly with plastic wrap and refrigerate for at least 30 minutes or up to 24 hours before serving.
Makes 3 cups (750 mL).
Tip: Serve with fruit salad or over warm oatmeal.
