Summer Sensation

Nectarine Waldorf Salad

A classic salad takes a summer vacation.

Ingredients:

4stalks celery, thinly sliced
2Ontario nectarines, chopped
1 cupred seedless Ontario grapes, halved250 mL
1/2 cupchopped toasted pecans125 mL
1 cupNordica Cottage Cheese (1% or Fat Free)250 mL
2 tbspGay Lea Butter (Salted), melted25 mL
2 tbspgranulated sugar25 mL
2 tspDijon mustard10 mL
1/2 tsppaprika2 mL
1/4 cuplemon juice50 mL
Pinch salt
8leaves lettuce



Instructions:

In large bowl, combine celery, nectarines, grapes and pecans; set aside.
 
In blender, purée cottage cheese, butter, sugar, mustard and paprika. Drizzle in lemon juice and purée until smooth.
 
Pour over celery mixture, add salt and toss to combine.
 
Place lettuce leaves around platter and pour salad mixture on top to serve.
 
Makes 6 servings.
 

Tip: Waldorf Salad will keep covered and refrigerated for up to 1 day. Stir well before serving.

To tote this salad be sure to keep it in an airtight container well chilled in a cooler to stay fresh.
