Summer Sensation
Nectarine Waldorf Salad
Ingredients:
| 4 | stalks celery, thinly sliced | |
| 2 | Ontario nectarines, chopped | |
| 1 cup | red seedless Ontario grapes, halved | 250 mL |
| 1/2 cup | chopped toasted pecans | 125 mL |
| 1 cup | Nordica Cottage Cheese (1% or Fat Free) | 250 mL |
| 2 tbsp | Gay Lea Butter (Salted), melted | 25 mL |
| 2 tbsp | granulated sugar | 25 mL |
| 2 tsp | Dijon mustard | 10 mL |
| 1/2 tsp | paprika | 2 mL |
| 1/4 cup | lemon juice | 50 mL |
| Pinch salt | ||
| 8 | leaves lettuce |
Instructions:
In large bowl, combine celery, nectarines, grapes and pecans; set aside.
In blender, purée cottage cheese, butter, sugar, mustard and paprika. Drizzle in lemon juice and purée until smooth.
Pour over celery mixture, add salt and toss to combine.
Place lettuce leaves around platter and pour salad mixture on top to serve.
Makes 6 servings.
Tip: Waldorf Salad will keep covered and refrigerated for up to 1 day. Stir well before serving.
To tote this salad be sure to keep it in an airtight container well chilled in a cooler to stay fresh.
