Comfort Cookies
Java Sticks
Try these Java sticks and pair them with coffee or dessert.
Preparation Time:

Ingredients:
| 1 cup | Gay Lea Butter (Unsalted), softened | 250 ml |
| 1/2 cup | icing sugar, unsifted | 125 ml |
| 4 tsp | crushed instant coffee powder | 20 ml |
| 1-1/2 cups | all purpose flour | 375 ml |
| 1/2 cup | finely ground walnuts | 125 ml |
| 6 oz | semi-sweet chocolate, coarsely chopped | 180 g |
Instructions:
Preheat oven to 350F (180C). Using electric mixer, beat butter with icing sugar until light and fluffy. Beat in instant coffee. Using wooden spoon, stir in flour and walnuts.
Place dough in pastry bag filled with plain 1/2" or 1" (1 or 2.5 cm) tip. Pipe into 2" (5 cm) lengths on parchment paper-lined, rimless cookie sheets.
Bake in centre of oven for 10 to 15 minutes or until golden brown. Cool on pan on racks.
Meanwhile, on top of double boiler set over hot (not boiling) water, melt chocolate. Dip ends of cookie into melted chocolate. Let set.
Makes about 2-1/2 dozen cookies.
