Halibut with Lemon Plum Sauce

(Halibut with Lemon Plum Sauce)

The sweetness of plum and tartness of lemon are perfect with your favourite fish.

Halibut with Lemon Plum Sauce

Ingredients:
4halibut fillet portions, about 6oz (175g) each4
2 tbspGay Lea Butter (Salted), melted25ml
1 tbspfinely chopped fresh basil15ml
1/4 tspeach salt and pepper1ml
Lemon Plum Sauce:
1/2 cupGay Lea Sour Cream (Low Fat or Fat Free)125ml
1/2 tspgrated lemon rind2ml
2 tbsplemon juice25ml
2 tbspchopped fresh chives25ml
1large Ontario black plum, finely chopped1
Pinch of salt


Instructions:

Lemon Plum Sauce: In bowl, whisk together sour cream, lemon rind, juice and chives until smooth. Stir in plums and salt; set aside.

Place fish in shallow dish, drizzle with butter, sprinkle with basil, salt and pepper. Place on greased grill over medium high heat; close lid and grill for about 10 minutes, turning once or until fish flakes easily with fork. Makes 4 servings.

Serve with Lemon Plum Sauce.
