Carrot and Coriander Soup

(Soup Favourite)

Preparation time: 40 Minutes

The perfect Harvest soup for those chilly days.

Carrot and Coriander Soup

Ingredients:
1/4 cupGay Lea Butter50 mL
2leeks, sliced2
4 cupssliced carrots1 L
1 tbspchopped fresh ginger15 mL
3 cupsLacteeze 1%, 2% or Skim milk750 mL
2 cupschicken broth500 mL
salt and pepper
Gay Lea Sour Cream
chopped fresh coriander


Instructions:

Melt butter in heavy saucepan. Add leeks, carrots and ginger. Stir until coated with butter. Cook on medium heat for 10 minutes. Add milk and broth. Bring to boil. Cover and simmer 20 minutes. Puree in blender in small batches until smooth. Add salt and pepper to taste. Garnish each with 1 tbsp sour cream and chopped fresh coriander.

Makes 6 servings.
