Creamy Cucumber Raita

This is a great accompaniment to the Bombay Chicken!

  • Yields: 4 to 6 servings
  • Preparation: 20 minutes

Ingredients

  • 1 cucumber, shredded
  • 1 tsp (5mL) salt
  • 1/3 cup (75mL) mint leaves, finely chopped
  • 1 cup (250mL) GAY LEA - Original Sour Cream
  • 1 green onion, finely chopped
  • 1 tsp (5mL) lemon zest
  • salt, to taste
  • black pepper, to taste

Instructions

  1. In large bowl, toss cucumber with salt and let rest for 15 minutes. Drain and rinse with cold water. Pat cucumber dry on a paper towel.
  2. Return cucumber to bowl and add remaining ingredients. Season with salt and pepper to taste. Serve immediately or refrigerate until needed.
