Pomodoro Sauce with Chicken and Linguine
Fresh tomato "pomodoro" sauces are an Italian classic! Here it is combined with creamy Canadian cheese and chicken for the ultimate delicious meal.

Ingredients:
| 12 oz | enriched linguine pasta | 375 g |
| 2 tbsp | butter, divided | 30 mL |
| 1/4 cup | grated Canadian Parmesan cheese | 50 mL |
| 12 oz | boneless skinless chicken, cut into bite-size pieces | 375 g |
| 1 tsp | dried basil or oregano | 5 mL |
| 3 | cloves garlic, minced | |
| salt and pepper | ||
| 6 cups | chopped ripe tomatoes | 1.5 L |
| 3/4 cup | shredded Canadian Mozzarella cheese | 175 mL |
Instructions:
In a large pot of boiling, salted water, cook linguine for 10 minutes or according to the package directions, until tender; drain well. Return to pot and toss with 1 tbsp (15mL) butter and Canadian Parmesan cheese.
Meanwhile, heat a large non-stick skillet over medium-high heat; melt remaining butter. Stir in chicken, basil, garlic, 1/2 tsp (2mL) salt and pepper to taste; cook stirring frequently for 5 minutes or until chicken is lightly browned and no longer pink inside. Reduce heat to medium; add tomatoes and heat through, 2 to 3 minutes. Season to taste.
Divide pasta among shallow serving bowls and spoon sauce over top. Sprinkle with Canadian Mozzarella cheese.
Tip: Plum tomatoes are meaty and less juicy than the round variety and are a good choice. If the tomatoes are acidic, stir in sugar to taste.
