Coconut Creme Caramel

Coconut Creme Caramel

Ingredients:
1/4 cupbrown sugar50 mL
3eggs3
1 1/2 cupsLacteeze 1%, 2% or Skim milk375 mL
1/3 cupgranulated sugar75 mL
pinchsaltpinch
1/4 tspvanilla extract1 mL
1/2 cuptoasted coconut125 mL


Instructions:
Divide brown sugar among four 175 mL custard cups, lightly packing into bottom of cups. Whisk together eggs, milk, granulated sugar, salt and vanilla. Pour into 4 custard cups. Arrange custard cups in a circle in microwave oven and microwave on medium setting for 7-8 minutes, rotating each custard cup halfway through cooking. Let stand 10 minutes. Refrigerate until cold. To serve, loosen edge with sharp knife and invert on serving plate. Garnish with toasted coconut.
To toast coconut, place in non-stick pan over low heat, stirring frequently until toasty brown colour.
Makes 4 servings.
