Cheese Stars

(Shortbread Inspirations 2)

Back by popular demand, the optional jalapeno turns up the heat as much or as little as you want.

Cheese Stars

Ingredients:
1/2 cupGay Lea Salted Butter, softened125 ml
2 1/2 cupsshredded mozzarella cheese625 ml
2 tbspgrated parmesan or romano cheese25 ml
1 1/2 cupsall purpose flour375 ml
1/4 tspeach salt and pepper1 ml
2 tbspmilk25 ml


Instructions:

Preheat oven to 350F (180C). Using electric mixer, beat together butter, Mozzarella and Parmesan cheeses. Using wooden spoon, stir in remaining ingredients. Divide dough into thirds; wrap each in plastic wrap and chill for 15 minutes.

On lightly floured surface, roll out dough, 1 piece at a time, until 1/4" (5 mm) thick.
Using star shaped cookie cutter, cut out stars; transfer to parchment paper-lined cookie sheets.

Bake in centre of oven for about 15 minutes or until crisp and golden. Cool on pan on racks. 

Makes about 32 stars.


Variation - Omit Mozzarella and Parmesan. Use 2-1/2 cups shredded Monterey Jack cheese and add 3 tbsp (45 ml) minced fresh jalapeno to the dough. (1 jalapeno).
