Fiesta Chicken Burritos

(Burrito Favourites)

Preparation time: 15 Minutes

These are quick and easy and have a Mexican inspired flavour in them.

Fiesta Chicken Burritos

Ingredients:
1 lbboneless, skinless chicken breasts500g
2 tspGay Lea Salted Butter10ml
Pincheach salt and pepperPinch
2 cupsshredded Cheddar cheese500ml
2/3 cupGay Lea Regular Sour Cream (Substitution: Try Gay Lea French Onion Dip or Gay Lea Light Sour Cream)150ml
1 cupdiced green pepper125ml
1/3 cupsalsa75ml
1/2cupsliced black olives (Optional)50ml
1jalapeno pepper, seeded and minced1
2 tbspchopped fresh coriander25ml
4large flour tortillas4


Instructions:

Cut chicken into small ?-inch (2.5cm) cubes.  In skillet melt Gay Lea Salted Butter over medium high heat and cook chicken, salt and pepper for about 8 minutes or until no longer pink inside.  Pour into large bowl and stir in 1/2 cups (375ml) of the cheese, Gay Lea Sour Cream, green pepper, salsa, olives, jalapeno and coriander. Divide mixture among tortillas and fold and roll to enclose filling completely and place seam side down in small baking dish.  Sprinkle with remaining cheese and bake in centre of preheated 350 F (180 C) oven for about 20 minutes or until cheese is melted and tortillas are crispy.
